Every French fine cheese, regardless of its category, has its history, and a unique way of making it. Reblochon is produced from the second milk of the day. Morbier comes from Comté, a unique cheese case from another cheese!
Wine highlight the cheese.
Each cheese has other moisture, other fat content, other texture and other flavor. Each wine also varies in acidity, sweetness, body and structure. There are necessarily rules that lead to successful combinations.
Young cheeses may be better suited to fresh wines that are fruity, dry rosé, red with good acidity and intense fruit or even sparkling.
The most mature cheeses match wines that have more complexity and more body.
